Sugarcane is what happens when someone actually gives a damn about seafood on the Strip. This isn't a casino add-on or a lazy concept—it's a legit raw bar with global flavors and a happy hour that hits hardest if you're into oysters. Sunday through Thursday, 3-6pm, you're getting $7 beer, $8 cocktails, and the star of the show: $2.50 oysters. That's the whole reason you're here.

The Oyster Economics

$2.50 per oyster during happy hour is stupid good for the Strip, especially when they're this fresh. Sugarcane takes their raw bar seriously—proper selection, properly shucked, properly presented. Order a dozen, get some mignonette and cocktail sauce, and remember what fresh seafood tastes like after three days of eating casino buffets. If you've never had oysters, this is a low-risk way to find out if you're into them.

Beyond the Bivalves

The happy hour extends to other apps and bites, most of which lean heavily into seafood. The ceviches are bright and citrusy, the tuna poke is fresh, and if you need something cooked, the grilled octopus is damn good. This is a raw bar first, so if you're squeamish about uncooked seafood, maybe hit one of the hundred burger joints instead. The $8 cocktails are well-made—lots of rum-based tropical stuff that pairs perfectly with the menu.

The Vibe & Setup

Sugarcane has a vibrant, colorful energy—lots of Latin and Asian influences in the decor and food. It's lively without being obnoxious, upscale without being stuffy. The bar is where you want to post up during happy hour, especially if you're solo or a couple. Groups can grab tables, but the bar gives you front-row seats to the raw bar action and better access to the bartenders.

Sunday Through Thursday Only

Note the schedule: Sunday through Thursday, 3-6pm. No weekend happy hour, which is a bummer if you're only in town Friday and Saturday. But the trade-off is a three-hour window, which is generous. The 3pm start is clutch for early birds or people who consider 3pm an acceptable drinking time (hi).

When to Go

This is a smart pre-dinner move if you're seeing a show or planning a big meal later—oysters won't wreck your appetite. It's also perfect for when you want something fresh and light instead of another plate of fried nonsense. The crowd during happy hour is a mix of hotel guests, locals, and seafood nerds who know this is one of the better raw bars on the Strip.

If you like oysters even a little bit, $2.50 is a no-brainer. If you don't like oysters, the rest of the happy hour menu is solid enough to justify the trip. Either way, it's a refreshing change from the usual Vegas options.
