Hussong's Cantina at Mandalay Bay is the south-Strip outpost of the cantina that started in Ensenada, a bright Baja room built around margaritas and a louder, looser energy than a quiet resort bar. The margarita list goes deep: $11 frozen, $11 El Pepino, $11 Smokey Paloma, $11 Mexi-Mule, and a $10 Michelada Caliente, with $6 draft pints if you'd rather keep it simple.

The food specials reward sharing. The $12 Hussong's nachos and $8 queso bean dip anchor a table well, and the $12 Diablo shrimp or $8 fish or shrimp specialty taco round things out. Note the timing closely: this runs late, and the kitchen closes at 11pm Sunday through Thursday and midnight Friday and Saturday, so the window can be tight earlier in the week.
